Cellar building

From a first case to a long-term collection, I'll help build a cellar that reflects your taste, your ambitions and your budget.

There is no universal list of wines that every cellar ought to contain. A good collection should reflect what you enjoy drinking, the occasions you are buying for and how long you are prepared to wait. We’ll begin with your tastes, budget, available storage and the balance you would like between bottles for now and wines to mature. From there, I can create a considered buying plan that may include everyday favourites, bottles for entertaining, significant vintages and longer-term additions.

Recommendations are independent and are not limited to the wines in The Cellar. Where the right bottle is available elsewhere, I will say so and help you source it through trusted merchants and other appropriate channels. This can be a one-off plan, help with a particular purchase or an ongoing relationship that develops alongside your cellar.

Cellars for the next generation
I also build cellars for children and godchildren - something I first did for my own godson - selecting bottles with the longevity to reach future milestones and creating a simple plan for adding to the collection over time. It may begin with a birth year, but the aim is to create something they can eventually enjoy, share and make their own.

Cellar audit

Understand what you already own, what is ready to drink, what deserves more time and where the opportunities lie.

A cellar audit is a practical review of your existing collection. I’ll look at what you own, how the wines are developing and whether the cellar still reflects the way you actually drink today.

That might mean identifying bottles that should be opened soon, highlighting wines worth leaving for longer, finding overlooked cases or recognising where the collection has become too heavily weighted towards a particular region, producer or style. I can also help organise your wines into a clearer drinking plan, so that bottles are enjoyed at the right moment rather than rediscovered too late.

The review can begin with an existing inventory, merchant statement or cellar visit. You’ll receive clear, prioritised recommendations shaped around your own aims - whether those are simply drinking better, creating more balance, making space or planning the next stage of the collection.

Corporate

Tailored gifting, client entertainment and workplace wine programs, curated with the same care I apply to every private collection.

Wine can make an excellent gift, create a natural focus for client entertainment and bring personality to an event - but only when it feels thoughtfully chosen. I can help with individual client gifts, seasonal selections, larger gifting projects, wines for dinners and events, or the development of an ongoing workplace or institutional wine program. I also work with restaurants, bars and hospitality groups to create or refine wine lists for a single venue or across multiple sites, balancing quality, identity, food pairing, value and commercial practicality.

Each brief begins with the people, place, occasion and budget rather than a predetermined list of bottles. The service can be as straightforward as finding one memorable wine or as involved as building a year-round programme or complete wine list. Advice can include bottle selection, provenance, presentation, pricing, food pairing, sourcing and delivery.

For hosted tastings, dinners and other wine-led occasions, the experience itself can then be developed through
The Table.

How it works

How The Advisory works

Every engagement begins with a conversation. I’ll ask what you already enjoy, what you are hoping to achieve and how much support you would find useful. From there, I’ll suggest a clear scope of work and agree any fees before we begin.

There is no minimum level of knowledge or collection size. You may be considering your first serious case, reorganising a long-established cellar or simply trying to choose the right bottle for an important occasion.
